In autumn 2019, the Austrian Federal Ministry for Sustainability and Tourism certified Restaurant Luftburg with the Austrian Ecolabel for the responsible management of the business and for its organic, regional cuisine with healthy, high-quality food. The management's sustainable corporate philosophy is not only aimed at sustainable enjoyment with a clear conscience, but also at the well-being of the environment.
What cannot be sourced regionally, we try to buy in "fair trade" quality. We have consciously chosen a sustainable and climate-positive production of our menus at gugler print*. The consumption of CO² emission is compensated by planting trees. The FSC logo identifies this paper from responsibly produced sources.
Our most valuable commodity is used sparingly. We ensure this, for example, by using water-saving dishwashers equipped with the latest technology; by installing aerators and sensor-controlled taps. The employees are continuously trained to carry out work processes in a water-saving manner. An osmosis system, an ionizer and the economical use of ecologically degradable cleaning agents round off the concept. We do not use any waste products from the chemical industry in the form of gel balls in our toilet facilities, which pollute the waste water and thus our environment.
Since 2012, our electricity requirements have been partly covered by our in-house photovoltaic system. We also use it to power the three electric cars in our fleet. All light sources, in and around the restaurant, have been converted to LED over the past three years. The ventilation and refrigeration systems are connected to a heat recovery system. We pay attention to low power consumption when buying new electricity appliances and our employees pay attention to resource-saving use of appliances and illuminants. The next step is to switch to 100% energy from hydropower.
We place great emphasis on waste separation and recycling, and our employees receive training in this area several times a year. It is important to us to avoid waste. We are therefore constantly looking to order reusable and large containers and to develop these with our producers and suppliers. By collecting and handing over our used cooking oil, we produce sustainable biodiesel and thus save CO².
Old appliances are repaired; eco-paper is used double-sided in the office; discarded boards or banners are repurposed, and more. Our guests may take home their precious food scraps in free biodegradable take-home dishes. Auction...
Equality of gender, religion, age and origin are basic requirements in our company. People from more than 25 different nations and cultures make up our team. For years we have employed recognized asylum seekers, who take their first steps into our culture with us, learn German and whom we thus integrate into our society. Training and support during the work processes as well as daily informative talks bring our employees to a common level of knowledge. We have been working with "jobwärts" for four years. We created new jobs for up to 7 impaired employees who enrich us and are fully integrated. Accompanied by a mentor provided by us, they are a valuable part of our community. Our employees are provided with living facilities and organic food and every year we celebrate a party together.
Our plants, trees, flowers and grasses are cared for with ancient knowledge. The love of living things and the moon are our default. Then we cut, weed and harvest. We do not use chemical fertilizers or sprays. Watering is only done in the morning and evening. Where possible, we plant trees and pay attention to native plants. Many animals live with us; various species of wild bees and bumblebees; our ravens and wild cats and the badger under our terrace.
